Pumpkin Flan Minis
Ingredients
- 3 eggs
- 2/3 cup canned pumpkin
- 1 cup half and half
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/3 cup bulk sugar substitute
Directions
- Prepare baking pan for water bath with 1 inch hot water. Place on center rack in over and preheat to 350 degrees. Spray 4 custard cups with cooking spray.
- Add eggs to large bowl and whisk until frothy. Add remaining ingredients and mix well. Pour mixture evenly between 4 cups. Place cups carefully into prepared water bath. Bake for 45 minutes or until set.
- Let cool for 30 minutes at room temperature before refrigerating. Serve cold with sugar-free whipped topping.
