Low Carb Breakfast Casserole

Ingredients:

  • 1 dozen eggs
  • ½ cup milk
  • 1 Tbls hot sauce
  • 1 lb cubed ham
  • 6 slices bacon, cooked & crumbled
  • 2 cups shredded cheddar
  • ½ medium onion, diced
  • 4 oz can mild green chilies, diced
  • Salt & Pepper to taste

Directions:

  1. Preheat oven to 350 degrees. Spray 9x13 baking dish with cooking spray.
  2. In large bowl, whisk together eggs, milk & hot sauce.
  3. Stir in ham, bacon, cheese, onion, chilies, salt & pepper.
  4. Pour mixture into baking dish and bake for 35-40 minutes or until eggs are set and edges turn slightly brown.
  5. Remove and allow to cool before serving.
