Cranberry Meatballs

Ingredients:

  • 2 pounds ground turkey
  • 2 large eggs
  • 1/4 cup finely minced onion
  • 1/2 tsp salt

Sauce:

  • 12 oz. cranberries, fresh or frozen
  • 2 cups beef broth
  • 1 cup bulk sugar substitute
  • 2 Tbls tomato paste

Directions:

  1.  Combine the first 4 ingredients and mix well.
  2. Combine sauce ingredients in slow cooker and set to high until simmering.
  3. Form meat mixture into golf-ball sized meatballs, dropping them into the slow cooker as you go. Cover and reduce heat to low.
  4. Let cook 4+ hours before serving.

Garnish with orange zest
Variation: Add 2 tsp. chili powder and 2 tsp. Worcestershire sauce to the sauce.
