Cranberry Meatballs
Ingredients:
- 2 pounds ground turkey
- 2 large eggs
- 1/4 cup finely minced onion
- 1/2 tsp salt
Sauce:
- 12 oz. cranberries, fresh or frozen
- 2 cups beef broth
- 1 cup bulk sugar substitute
- 2 Tbls tomato paste
Directions:
- Combine the first 4 ingredients and mix well.
- Combine sauce ingredients in slow cooker and set to high until simmering.
- Form meat mixture into golf-ball sized meatballs, dropping them into the slow cooker as you go. Cover and reduce heat to low.
- Let cook 4+ hours before serving.
Garnish with orange zest
Variation: Add 2 tsp. chili powder and 2 tsp. Worcestershire sauce to the sauce.
