Baked Fusilli With Spinach

Ingredients

  • 2 packets Proti pasta
  • 15 oz fat-free ricotta cheese
  • 1/2 cup shredded mozzarella
  • 15 oz can tomato sauce with Italian seasoning
  • 10 oz package frozen spinach, thawed & squeezed dry
  • 1 egg white
  • 2 Tbls grated Parmesan cheese

Directions

  1. Preheat oven to 375 degrees.
  2. Lightly grease and 8x8 inch baking dish.
  3. Bring water to boil in large pot, cook pasta & drain.
  4. Return pasta to pot.
  5. Combine ricotta, mozzarella, and 3/4 cup sauce, spinach and egg in medium bowl.
  6. Add cooked pasta and mix well.
  7. Pour pasta mixture into prepared dish.
  8. Top with remaining sauce and Parmesan cheese.
  9. Bake for 20 minutes until hot & bubbling.
  10. Let stand for 10 minutes before serving.
