Bacon Wrapped Water Chestnuts

Ingredients:

  • 4 cups parsnip, chopped
  • 1 cup carrots, chopped
  • 1 cup yellow onion, chopped
  • 10 oz. mushrooms, chopped
  • 4 garlic cloves, minced
  • 1 pat butter, or coconut oil
  • 1 teaspoon fresh thyme leaves (4-6 sprigs)
  • 2 sprigs fresh sage (10-12 leaves), chopped
    salt and pepper, to taste

Directions:

  1. Preheat your oven to 400F and line two baking sheets with parchment paper. Arrange chopped parsnips in single layer on one baking sheet, and the chopped carrots and onion on the other.
  2. Roast both pans of vegetables at 400F for about 30 minutes, or until tender.
  3. Stir the vegetables half-way through the roasting time.
    Saute the garlic in butter or coconut oil for 5 minutes, then add in the mushrooms and cook until tender.
  4. When ready, transfer the roasted vegetables and sauteed mushroom mixture to a large food processor. Add in the thyme, sage and salt and pepper, to taste.
  5. Quickly "pulse" the vegetable mixture, so that it combines, but still has a chunky texture. Adjust seasonings to taste, and serve warm!
