Toscana Soup Recipe

Ingredients

  • 4 cups fat-free chicken broth
  • 1/3 cup half & half
  • 1 large russet potato
  • 3-4 cups chopped kale
  • 1 pound smoked turkey sausage
  • ¼ tsp. salt (omit if using commercial chicken broth)
  • ½ tsp. crushed red pepper flakes

Directions

  1. Combine broth & cream in saucepan over medium heat.
  2. Slice unpeeled potato into ¼ inch slices then quarter and add to soup.
  3. Add chopped kale.
  4. Saute the sausage & cut into angled slices about ½ inch thick. Add sausage to the soup and finish off with spices.
  5. Simmer for about 1-2 hours, stirring occasionally.
