Skillet Chicken Italiano
Ingredients
- 3 tbsp. coconut oil
- 1 clove garlic, minced
- 2 lg. chicken breasts, skinned/boned in 1"cubes
- 1 cup frozen Italian green beans, thawed
- ½ red bell pepper, chopped
- ½ tsp. salt
- 2 whole tomatoes, quartered
- 4 mashed anchovies (made to paste)
- 2 tbsp. pimiento, diced
- 1 tbsp. capers, rinsed, drained
- 1-2 tbsp. fresh lemon juice
Directions
- Heat coconut oil in a wok or large skillet over high heat. Sauté garlic in the oil.
- Add chicken breasts, green beans, red pepper and salt.
- Stir-fry for about 3 minutes.
- Add tomatoes, anchovies, pimiento and capers.
- Stir-fry for about 1 minute & sprinkle with lemon juice.
- Turn onto platter and serve.
