Tilapia with Coconut & Cilantro

Honey Lime Tilapia

Ingredients:

  • 4 - 6 oz tilapia fillets
  • 1/4 tsp salt
  • 1/2 cup light coconut milk
  • 1/2 cup fresh cilantro leaves, minced
  • 1 tsp peeled & chopped fresh ginger
  • 1/2 tsp garam masala
  • 2 cloves garlic
  • 1/2 jalapeno pepper, seeded

Directions:

  1. Preheat oven to 425 degrees. Spray 9x13 pan with cooking spray.
  2. Sprinkle fish with salt and place into pan.
  3. Combine coconut milk, cilantro, ginger, garam masala, garlic and jalapeno in a blender and pulse until fairly smooth. Pour mixture over fish.
  4. Bake until fish is just opaque in the center, about 15 minutes. Garnish with more cilantro.
