Low Carb Breakfast Casserole
Ingredients:
- 1 dozen eggs
- ½ cup milk
- 1 Tbls hot sauce
- 1 lb cubed ham
- 6 slices bacon, cooked & crumbled
- 2 cups shredded cheddar
- ½ medium onion, diced
- 4 oz can mild green chilies, diced
- Salt & Pepper to taste
Directions:
- Preheat oven to 350 degrees. Spray 9x13 baking dish with cooking spray.
- In large bowl, whisk together eggs, milk & hot sauce.
- Stir in ham, bacon, cheese, onion, chilies, salt & pepper.
- Pour mixture into baking dish and bake for 35-40 minutes or until eggs are set and edges turn slightly brown.
- Remove and allow to cool before serving.
